Edamame Salsa

Ingredients
  1. 1 small onion diced
  2. 1/4 cup olive oil
  3. 1/4 cup season rice wine vinegar
  4. 1 can black beans, no salt added, drain
  5. 1 small tomato chopped
  6. 1 red pepper diced
  7. 1/2 bag trader joe’s roasted corn, cook and cool
  8. 1 bag target’s edamame, cook and cool
  9. 2 tbsp Thai blend from gourmet garden
  10. 1 tsp cumin ( more or less for your taste )
  11. Kosher salt and freshly ground black pepper to taste
Instructions
  1. Whisk Thai blend and rice vinegar, slowly add oil
  2. Add everything together marinate 2- 24 hours
  3. Serve with tortilla chips
