Ingredients
  1. 3 cups cooked basmati rice, or brown rice
  2. 1 can (16 ounces) kidney beans, rinsed and drained
  3. 1 can (15 ounces) black beans, rinsed and drained
  4. 1-1/2 cups frozen corn, thawed ( Trader Joe’s Roasted Corn is great )
  5. 4 green onions, sliced or 1 small onion diced
  6. 1 red pepper, chopped
  7. 1/2 bunch minced fresh cilantro
DRESSING
  1. 1/2 cup olive oil
  2. 1/4 cup balsamic vinegar
  3. Juice of 1 lime
  4. 1 tablespoon sugar
  5. 1 garlic clove, minced ( or use powdered )
  6. 1 teaspoon salt
  7. 1 teaspoon or ground cumin
  8. 1 teaspoon chili powder
  9. 1/4 teaspoon pepper
Instructions
  1. In a large bowl, combine the first seven ingredients. In a small bowl, whisk the dressing ingredients; pour over salad and toss to coat. Chill until serving.
  2. Serve with tortilla chips.
